We are accustomed to the classic methods of preparing yeast dough, the essence of which is to ferment the dough in a warm place. In the recipe I propose, the dough rests in the refrigerator. It is still unknown what processes take place inside it, but after 4 hours the dough becomes suitable for baking and has a porous structure. It differs in consistency from regular yeast dough. I like to make pies with any filling, buns, buns, pies from it. The dough forms very well, it is pleasant to work with, and you can cut out various figures from it to decorate pies. It can be stored in the refrigerator for several days without turning sour. Experts say that it can even be frozen, and after defrosting it does not lose its properties. Ingredients

Dough:

  • Premium wheat flour 500 g
  • Fresh pressed yeast 25 g
  • Chicken eggs 1 pc.
  • Butter 100 g
  • Milk 250 ml
  • Granulated sugar 2 tbsp. spoons
  • Salt 0.25 teaspoon

Filling:

  • Confectionery poppy 150 g
  • Sugar 4 tbsp. spoons
  • Salt 1 pinch

Glaze:

  • Cherry syrup 20 g
  • Powdered sugar 3 tbsp. spoons

For lubrication:

  • Chicken eggs 1 pc.

How to make yeast pies with poppy seeds


  1. Prepare all ingredients for the dough.

  2. Heat the milk to a temperature of 36–37 °C and dissolve the yeast in it.

  3. Beat the egg with sugar and salt.

  4. Melt the butter in a water bath and cool to room temperature.

  5. Add eggs and butter to the milk-yeast mixture and mix thoroughly until smooth.

  6. Add sifted flour in small portions

  7. Knead the dough with your hands. It should be soft, tender and not stick to your hands. Roll it into a ball.

  8. Place the dough in a large plastic bag, squeeze out the air and seal. Place the bag in the refrigerator and leave for at least 4 hours, or better yet, overnight.

  9. Prepare all the ingredients for filling and finishing the pies.

  10. Pour hot water over the poppy seed so that it just covers it, and cook over low heat until it has completely absorbed all the liquid, and cool.

  11. Grind the poppy seeds with a blender or pass through a fine grinder twice and mix thoroughly with sugar and salt.

  12. Remove the finished dough from the bag, place in a bowl, cover with a napkin and leave at room temperature for 30–40 minutes.

  13. Separate pieces weighing about 65 g from the warmed dough.

  14. Roll each ball of dough into a thin flat cake.

  15. Spread the filling on the flatbreads, moving a short distance from the edge.

  16. Roll the flatbread into a roll. Press the edges of the roll with the edge of your palm (glue them together).

  17. Turn the roll over and pin the ends at the top.

  18. Place the rolls on a greased baking sheet, seam side down, leave for 15 minutes to proof under a napkin, and then brush with beaten egg.

  19. Bake the pies in an oven preheated to 200°C for 25 minutes. Remove the finished pies from the oven, sprinkle with warm water from a spray bottle, cover with a towel and leave for 10 minutes. The pies can be coated with a glaze made from some syrup ground with powdered sugar, but this must be done immediately before eating, otherwise the glaze may melt.

  1. Pour the milk into the pan (leave 1 tbsp for greasing the poppy seed pies), heat to 40C and remove from heat. Sift half of the flour together with dry yeast through a sieve and stir, making a deep well in the center. Pour warm milk into the hole, continuously stirring the flour mixture from the edges.
  2. Knead the dough tightly, cover the bowl with a light and slightly damp towel. Leave the yeast dough for an hour in a warm place (about 35C) until it doubles in size. Remove the eggs from the refrigerator and leave them at room temperature for this time.
  3. When the dough has doubled in size, beat 2 eggs into a small bowl, and beat the third egg into a separate container. Beat one egg with a fork, pour half of it into the first two eggs, and put the rest in the refrigerator. Beat 2.5 eggs with sugar and salt until smooth. Melt the butter over low heat, without bringing it to a boil, and leave to cool to a slightly warm temperature.
  4. Pour the egg mixture, warm oil into the dough and stir. Sift the remaining half of the flour through a sieve and mix it into the dough. Knead the dough with your hands for several minutes until it begins to stick to your palm. Cover the bowl with a light and slightly damp towel and leave the dough warm for an hour.
  5. Pour the poppy seeds into a bowl and pour boiling water over them (its level should be a couple of centimeters above the level of the poppy seeds). Cover the bowl with a lid and leave for 40 minutes at room temperature. Then drain all the water, placing the poppy seeds on a sieve lined with gauze. Return the soft poppy seeds to the pan and grind using a potato masher, wooden pestle, or mince.
  6. Add sugar and honey to the crushed poppy seed mass and mix thoroughly until completely homogeneous. Punch down the risen dough and divide into 12-14 pieces of equal size and form them into balls. Roll the balls into flat cakes, place 1 tbsp in the center. poppy seed filling. First you need to wash the poppy. To do this, pour the poppy seeds into a deep bowl and fill with cold running water, which should cover the poppy seeds by a couple of cm.

The poppy poppy is empty and does not contain poppy milk, so you need to scoop it up with a spoon and throw it away.

Next, pour the poppy seeds and water into a fine sieve. When the water has drained from the poppy seed, pour it into a small saucepan, add water so that it covers the poppy seed by 3 cm and cook for 30 minutes. Our grandmothers baked pies in the oven using yeast dough. The recipe for this dough is also suitable for baking products in the oven.

First you need to prepare the dough. To do this, the milk must be warm (about 37-40 degrees). We dilute yeast in milk (room temperature).

Add 1 tbsp to the diluted yeast. l. sugar, mix, add 3 tbsp. l. sifted flour.

Mix this mixture. Cover the dough with a towel and place in a warm place for 45 minutes.

While the dough is settling, you can start preparing the poppy seed filling.

After 40-45 minutes, the dough should double in size and bubbles should appear on it.

Next, add two eggs (room temperature), the remaining sugar, a pinch of salt, melted (not hot) butter to the dough, mix all the ingredients, add flour in small portions, knead the dough, add sunflower oil and knead the dough.
